CADE Crush on Howell Mountain



CADE Hospitality Manager DJ Nielsen talks Crush at CADE...

Harvest is here at CADE Winery and it could not be any prettier or smell better up here at CADE Winery. Our cellar staff has been working in overdrive over the last couple of weeks as each day brings new grapes from some of our local farmers up here on Howell Mountain. The excitement of the grape harvest has also peaked the creative mind of Estate Chef Kent Nielsen as he works his magic in our kitchen preparing unique dishes to pair with our CADE Wines. Over the last few weeks our Estate Garden has supplied us with Heirloom tomatoes in every color, shape and flavor giving us flexibility for pairing with not only the CADE Sauvignon Blanc but our CADE Cabernet Sauvignon’s as well. We also just received some Aged Black Garlic from our produce purveyor that is fermented in soy which is a flavor profile of our newly released 2006 CADE Cabernet Sauvignon Howell Mountain. We are playing with all sorts of applications you will soon see on the Food and Wine pairing menu.

It is looking like harvest will last to the end of October which has provided our visitors a great glimpse into our winemaking process as our tours walk from our wine lounge, into our winery and through our cave. With only a month left we are excited for the wine to be in barrel but a little sad that harvest will be over because it is such a magical experience up here at CADE. For those of you who want a little inside information, we have not begun to pick our Estate vineyard at CADE but that should happen in the next couple of weeks and the best bet would be to sign up for our 11am tour because the grape crushing usually takes place in the morning.

A word from Josh at the PlumpJack Winery...

Greetings from PlumpJack Winery!

It will be an exciting day at PlumpJack Winery on Friday, October, 10 2009. We have the pleasure of crushing eleven tons of Pat Garvey Vineyard’s 2009 St. Helena Chardonnay. Our crush pad is located adjacent to our hospitality room, which creates a great chance for your guests to see our winemakers doing what they love most-- making PlumpJack wines. As an added bonus to crush, we will also be featuring our 2007 PlumpJack Reserve Chardonnay and our 2006 PlumpJack Estate Cabernet Sauvignon for your guests and friends to sample and purchase. The Cabernet is only being poured one day a week at PlumpJack due to the dwindling inventory on hand.

The 2007 Reserve Chardonnay is a perfect match to prior vintages. Primary aromas of baked apple, Bartlett pear, banana, and pineapple give way to flavors of pineapple, guava, apple cobbler and cinnamon spice cake. In its youth this wine posses striking acidity and after a year of bottle age you can expect this wine to develop rich mouth coating textures of classic full bodied chardonnays. Given the wine’s natural acidity, this wine is firm enough to age for 3-4 years.

The 2006 PlumpJack Estate Cabernet Sauvignon features primary aromas of black cherry, plum, cocoa powder and black currant are followed by secondary aromas of raspberries, baker chocolate and briar patch. In the mouth, primary flavors of plums, roasted almond, black cherry and black olive are followed by secondary aromas of blackberry pie filling, vanilla bean and stone fruit. The finish is long and rich with a hint of tannin which points in the direction that this is a wine with ageing potential. Beautifully crafted with wonderful fruit purity, this wine will easily age for the next 7-10 years. Can’t wait to see you at PlumpJack.
